What is no-bake cheesecake?
N0-bake cheesecake is precisely what the name suggests, you don’t need to bake this cheesecake! Graham cracker crust with rich and fluffy cream cheese filling, topped with your favourite fruit, is just so heavenly and delicious and perfect for the summer, especially when you don’t feel like baking in a hot steaming kitchen, or when the oven is already so crowded.
No-bake cheesecake is the easiest dessert you can make! There is no room for error because all you need to do is to make the crust and whip the cream cheese with several ingredients. You don’t need to worry about if you overbake, overbeat, or underbake your cheesecake. The most disappointing thing about baking a regular cheesecake is when the cheesecake is cracking! Trust me, I’ve been there.
No-bake cheesecake is perfect for beginners and this is the simplest no-bake dessert on earth.

Pro-tips for making The Best Easy No-Bake Cheesecake recipe:
- The cream cheese has to be softened – I left mine at room temperature for 2 hours prior.
- Full Fat Cream cheese is a must for the rich creamy flavour.
- I used Chocolate Graham cracker for the crust which is more delicious in my opinion.
- You may add some lemon peel to the filling for the fragrant, other citrus peels, or even vanilla beans.
- The cheesecake can be kept in the fridge for a few days, you may want to make it ahead of time before the party.
- The cheesecake has to be chilled for 6 hours+. Best overnight.
- The whipping cream has to be whipped into peaks before mixing it with the cream cheese.
How to make The Best Easy No-Bake Cheesecake recipe?
Use a food processor to ground the graham crackers.
Mix together melted butter and Graham cracker ground. Press the mixture into the bottom of the baking pan to form an even layer of crumbs. Put it in the preheated oven to bake for 10 minutes. Set aside to cool and refrigerate for 30 minutes.
Use a hand mixer or a stand mixer to beat the whipping cream into stiff peaks. Set aside.
Using a hand mixer or a stand mixer fitted with a whisk or paddle attachment beat the cream cheese and granulated sugar together on medium speed until perfectly smooth and creamy. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed.
Add in sour cream, lemon juice, and vanilla extract. Beat for 2-3 minutes on medium-high speed until smooth and combined. Make sure there are no large lumps of cream cheese.
Fold the whipped cream into the cheesecake filling until combined. This takes several turns of your rubber spatula. Combine slowly as you don’t want to deflate all the air in the whipped cream.
Pour the cream cheese mixture into the crust. Refrigerate for 6 hours, best overnight.
Decorate the cake with freshly whipped cream and fresh fruits.
