These Chinese Stir Fried Beef Short Ribs are super tender and juicy, they pair so well with rice~ I always love to use onion and oyster sauce when cooking stir-fried beef. Today is no exception.
Beef short ribs are a beautiful cut of meat, they have a unique flavour and are very easy to manage. I have seen people pan-searing them without any marinating and seasoning, and the beef was surprisingly good!
Here I am using Wagyu beef short ribs, but Angus beef would work too!

I am always down for a good short ribs dish! For the longest time, I didn’t know how to cook them properly and they were so rubbery and unpleasant.
I have shared my pineapple marinated short ribs before, that’s more of a Korean BBQ style that we serve the ribs uncut. Using pineapple as a tenderizing agent is super smart. Thank you food science. 🙂
Pineapple is mainly used in the form of juice to the marinade to tenderize the meat and add flavour. However, pineapple pulp in minced form can also be used for the same purpose. Here are a few points that should be considered while using pineapple to marinate meat.
To marinate a piece of meat in pineapple juice or pulp, take a shallow container and place the meat in it. Now pour the juice or minced pulp on top to cover the meat evenly from all sides. The quantity of the marinade should be just enough to coat the meat from all sides for uniform flavour and tenderness. (Source)
Will Canned pineapple work?
Fresh pineapple juice or pulverized fresh pineapple is mandatory. Canned pineapple is heated which kills the enzyme so it won’t work.

How Far In Advance Can I Make this Chinese Stir Fried Beef Short Ribs?
You may marinate the beef in the fridge and store them in an air-tight container for up to three days. I do not recommend cooking this dish in advance and reheating it, because beef is very easily overcooked and you may end up having rubbery meat.

- 6 short ribs
- 1/4 cup pineapple pulps
- 1 tbsp soy sauce
- 1 tsp sugar/ monk fruit sweetener
- 1 tsp cornstarch
- 1 tsp sesame oil
- 1 tsp Worcestershire sauce
- 2 tbsp oyster sauce
- 1/4 cup Chinese cooking wine
- 1 Onion
- Some roasted sesame seeds
- Some chopped green onion
Instructions
- Pat dry the beef
- Marinate them with pineapple pulp for 15 minutes.
- Remove the pulp
- Use a paper towel to clean the excess
- Cut them into smaller pieces
- Marinate the beef with soy sauce, sugar, cornstarch, Worcestershire sauce, and sesame oil, for at least 30 minutes.
- Cut onion into slices.
- Heat a frying pan and oil. Pan-sear both sides of the beef.
- Flip them, and set the beef aside.
- Cook the onion until brown.
- Add Chinese cooking wine.
- Let the alcohol evaporates, then add oyster sauce, and cook until the sauce is thickened.
- Put the beef back in the pan
- Give it a good stir.
- Garnish with toasted sesame seeds and chopped green onions.
- Enjoy it!
