I love apple pie! This double crust apple pie recipe is so simple and easy to make, all you need is patience and time. I made the crust dough a day ahead, and roll the dough out the next day. All you need is 5 minutes time the night before.

Apple pie is not only for Thanksgiving or Christmas, I literally make AND EAT apple pie all year long. The homemade flaky crust with sweet and perfectly spiced apples is so heavenly. I often pair it with a cup of coffee or tea.

In this recipe, I am going to show you my secret recipe for making the best pie crust as well as the best apple filling!

I have shared my homemade apple pie recipe before, but this is the refined version. You know me, I want to improve! 😀

What do you need to make this double crust apple pie recipe?

Pie Dough

  • Pastry Flour
  • All Purpose Flour
  • Unsalted butter (cold)
  • Salt
  • Apple Cider Vinegar
  • Egg
  • Cold Water

Apple Filling:

  • 3 lbs granny smith apples – cored and thinly sliced
  • cinnamon Sugar
  • Cinnamon powder
  • sugar
  • water (Optional)

How far in advance can we make this double-crust apple pie recipe?

You can make it a month ahead and keep it in the freezer and bake it for 10-20 minutes extra right straight from the freezer.

If you prefer freshly baked pie, you can make the pie crust a day before, and the apple fillings separately in the fridge, quickly assemble the next day and bake it right away.

You may also have it baked and keep it in the fridge overnight, and reheat it in the 375F oven for 15-20 minutes before serving.

Should you cook apples before putting them in the double crust apple pie recipe?

YES! You always want to ensure the apple is softened before baking. You may argue the apple will be cooked in the oven, but keep in mind that you have the top crust covering the apple so it may not cook through.

Always cook the apple before putting them in the apple pie, you can also adjust the seasonings of the apple and taste it before you bake the double crust apple pie recipe. 🙂

What apples should not be used for apple pie? What apples are the best for apple pie?

The BEST apple I will suggest is granny smith. They are made for baking IMAO.

Another one that I recommend is honey crisp.

I will say tart apples are pretty good in baking, but you can get the ones that you like. This is why we love homemade. 🙂

I do not use red delicious, ambrosia for baking, because I prefer to eat them instead. 😛

Can this double crust apple pie recipe be frozen?

Yes, absolutely! I tried to freeze the pie and that was the best experiment ever! You can freeze it for up to a month and just pop it into the oven and bake it for extra 10-20 minutes! Super delicious and extra flaky!

  • Sift pastry flour and all-purpose flour into a bowl

  • Cut cold butter into cubes

  • Toss the butter into the flour
  • Press the butter and flour togethe until you get sandy texture

  • Add in egg, cold water and apple cider vinegar

  • Mix well until you can form a dough.

  • Press the mixture into two disks: one bigger and one smaller

  • Wrap them with plastic wrap and allow to rest overnight.

Apple Filling:

  • Peel and cut apples into cubes.

  • Heat an non-stick pan, toss apple in, then pour in sugar. Mix well

  • Cook until the juice is on the pan, add water if needed.

  • Add Cinnamon Sugar and Cinnamon power. Mix well.

  • Bring it to boil and simmer the apple unil soften. Turn off the heat and set aside.

Assemble the apple pie

  • Roll out the bigger dough to line a pie dish.

  • Wrap one crust around the rolling pin and transfer the crust to the baking pan.

  • Cut off the excess dough and fold the edge. Then set aside.

  • Poke holes on the bottom of the pie dish.

  • Pour the apple filling into the crust.

  • Roll out the top crust and cover it on the pie, trim off excess.

  • Use a fork to seal the edge.

  • Make a few slits on the top of the crust.

  • Brush with egg waash and sprinkle some sugar on it.

  • Bake in an preheated 400F oven for 60 minutes.

  • Transfter to a coolin rack to cool down before cutting.

  1. Apple Pie can be kept in the freezer for 1 month, bake it for 10-20 minutes longer straight from the freezer.
  2. Pie crust dough needs to rest for a minimum of 1 hour, best overnight.
