  • 3 boneless pork chops
  • black pepper
  • Garlic Powder
  • 1 Shallot
  • Cornstarch
  • 1 egg
  • 2 cloves garlic, minced
  • Half a tomato
  • 2 tablespoon tomato paste
  • 1 teaspoon sugar
  • 2 cups cooked rice
  • 1 cup shredded mozzarella cheese
  • Some Cheddar Cheese
  • Some Parmigiano cheese
  • Green Onion for Garnish

You can make Hong Kong Baked Pork Chop Rice ahead of time and store it in the fridge for up to 2 days before baking it. After baking, it’s best to consume it immediately for the best taste and texture. Alternatively, you can also freeze the unbaked dish for up to 2 months. Simply cover it tightly with foil and place it in the freezer. When you’re ready to bake, let it thaw completely in the fridge before baking according to the recipe instructions.

Ingredients
  

Instructions
 

Pork chop.

  • In a shallow dish, mix together cornstarch, black pepper, and garlic powder.
  • Coat pork chops with the cornstach mixture.
  • Coat pork chops with beaten egg.
  • Pan-sear both sides of the pork chop until brown.
  • Set aside to cool.

Rice:

  • Make fried rice with eggs and rice. (2eggs for 2 cups of rice)
  • Transfer the rice into baking dishes.
  • Cut pork chops into strips, and transfer them on the rice bed.

Sauce

  • Saute shallot and garlic.
  • Add cooking wine, and stir for 30 seconds until the alcohol evoporated.
  • Remove most of the garlic and shallot from the pan.
  • Add sweet peppers, and cook for a few minutes.
  • Add tomato paste and water. Mix until combined.
  • Add tomato wedges, and cook for a minute.
  • Pour the sauce on the pork chops.
  • Layer fresh mozzarella cheese on top.
  • Sprinkle some shredded cheddar cheese.
  • Baked for 30 minutes until brown.
  • Garnish with green onion and topped with shredded Parmigiano cheese
  • Enjoy.
