What ingredients do you need to make these Chinese Chive Beef Dumplings?

  • 454 g ground beef
  • 42 wrappers
  • 2 tbsp soy sauce
  • 2 tsp sugar
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp Worcestershire sauce
  • 1 tbsp water
  • 4 bunch Chinese chives
  • 3 cloves Garlic minced
  • 1 ginger minced

How far in advance can we make these Chinese Chive Beef Dumplings ahead of time?

Chinese chive beef dumplings can be made ahead of time and stored in the refrigerator or freezer. Here’s how long you can keep them:

  • Refrigerator: You can make the dumplings up to 1 day in advance and store them covered in the refrigerator until ready to cook.
  • Freezer: If you want to store the dumplings for longer, you can freeze them for up to 3 months. Arrange the dumplings on a baking sheet lined with parchment paper and place them in the freezer until they are frozen solid. Then, transfer them to an airtight container or freezer bag and store them in the freezer.

Keep in mind that the longer you store the dumplings, the more likely they are to lose their texture and flavour. To ensure the best taste and texture, it’s best to cook them as soon as possible after making them.

How to cook these Chinese Chive Beef Dumplings?

There are two main ways to cook Chinese chive beef dumplings: pan-searing and boiling. Here are the steps for both methods:

Pan-searing method:

  1. Heat a non-stick skillet over medium-high heat and add enough oil to coat the bottom of the pan.
  2. Place the dumplings in the skillet, flat side down, and cook for 2-3 minutes or until the bottoms are golden brown.
  3. Add water to the skillet (enough to cover the bottom of the pan by about 1/4 inch) and cover with a lid.
  4. Cook the dumplings for an additional 5-7 minutes or until the water has evaporated and the dumplings are fully cooked.

Boiling method:

  1. Bring a large pot of water to a boil and add a pinch of salt.
  2. Gently place the dumplings in the boiling water and stir gently to prevent them from sticking together.
  3. Cook the dumplings for 4-5 minutes or until they float to the surface and the filling is fully cooked.
  4. Add a cup[ of lukewarm water to the pot and bring it to a boil again.
  5. Remove the dumplings from the water with a slotted spoon and serve immediately.

Both methods are delicious and yield slightly different results. Pan-searing creates crispy bottoms with a chewy texture while boiling creates soft and tender dumplings. Serve your dumplings with a dipping sauce of your choice, such as soy sauce, vinegar, or chilli oil. Enjoy!

Prepare the fillings:

  • Marinate ground beef with soy sauce,sugar, cornstarch, seseame oil, worcestershire sauce, and wateri. Mix until combined.
  • Chop Chinese chives into small pieces.
  • Add chives and minced garlic and ginger into the meat mixture.

Folding dumplings:

  • Mix everything together until combined.
  • Take a wrapper, scoop some beef mixture in the middle of the wrapper.
  • Wet the edge with water
  • Fold the dumpling in half and use your thumbs to press the edges together, folding and pressing as needed to shape it into a traditional dumpling shape.
  • Set them aside.

Cooking: Pan-searing

  • Heat an oiled pan, put the dumplings on the pan one by one.
  • Cook until the bottom is golden brown.
  • Add 60ml of water in the pan and cover with a lid.
  • Turn down the heat to low and let it steam for 5 minutes.
  • Turn the heat back up to high and let the water evaporated.
  • Serve.

Cooking: Boiling in water

  • Bring a pot of water to a boil, add salt.
  • Add dumplings, and give it a good stir.
  • Bring it to a boil, then add a cup of lukewarm water to the pot, and bring it to a boil again.
  • Transfer the dumplings to a bowl.
  • Garnish and serve.
