The best thing for me is I can quickly wrap them in plastic wrap and take them with me to work. One slice a day keeps the doctor away, well, at least the psychiatrist. LOL

The best way to ripen the banana quickly is to put them in a paper bag, it will take them a few days to get the black dots on them.

I always get bananas from Costco, and I will use most of them for my smoothie during the week, and usually, after a week, 1-2 leftover bananas will be overripe and this is the perfect time for me to bake banana bread!

You always need to plan ahead so you will have ripe bananas for the recipe!

  • Toast chopped walnuts in a 325F preheated oven for 15 minutes. Set aside to cool.

  • Add in eggs, one at a time, and mix until incorporated.
