Sablefish, also known as black cod, is surprisingly not actually part of the cod family. Another nickname for sablefish is “butterfish,”

Rich, buttery-sweet flavour with a silky and luscious texture, sablefish is one of the most prized white fish species. Sablefish are a fish species that live in the sea beds of the Pacific Northwest, as a British Columbian, my freezer always has a few sablefish because they are not expensive to get.

Sablefish is versatile, and its high-fat content makes it forgiving to the novice cook because the fat acts as a buffer against overcooking. It is almost impossible to overcook sablefish!

Black Cod VS Cod?

Black Cod boasts white and fatty meat, with a velvety texture and buttery flavour. Cod meat is white and flaky, but firmer and leaner. It has a fair bit of moisture and a mild taste. The good news about both fish is that they’re abundant in their habitat, which means that you can catch your fill any time you want!

How to make the pan seared sablefish black cod recipe?

Heat an oiled pan, pan sear both sides of the cod, meat side down first.

Flip it and sear the skin side, and transfer it to a plate.

Melt butter in a frying pan, and put lemon slices on to infuse the citrus flavour into the butter.

pour the sauce onto the fish.

Serve with veggies and mashed potatoes.

Run your fillet knife down the fish’s spine from tail to head. Start your cut at the base of the tail, and use the fish’s backbone to guide your cut. Don’t cut roughly or saw it away; instead, use a smooth and gentle slicing motion.

The absolute best way to thaw frozen fish is by leaving it in the fridge until it’s completely thawed. Then soap it in salted water for at least 30 minutes. Run the fish under running water to wash off the dirt and pat dry. You may marinate the fish when it’s dry.
