Super Easy yet Delicious French Onion Soup

This is my not-so-authentic version of super easy yet delicious French onion soup. Sweet caramelized yellow onions topped with croutons and melted cheese, this is just so comforting and tasty!

French onion soup is so perfect to be served as a first course, especially when the weather is cold, a warm bowl of cheesy hearty onion soup can warm the soul.

My version of French onion soup has a Hong Kong twist to it. Some Hong Kong local cafes serve French onion soup, I remember how rich caramelized flavours the soup had when I first tasted it.

I have shared my authentic Hong Kong Style French Toast before. Hong Kong cha chaan teng has a good variety of Western food, and as I mentioned in the post, that unique Hong Kong twist is just very unique and you can’t find it anywhere but Hong Kong.

What do you need to make this super easy yet delicious French onion soup?

  • yellow onions
  • butter
  • cognac
  • chicken or beef stock
  • salt
  • pepper
  • parmesan cheese
  • cheddar cheese
  • baguette
  • garlic

What is the difference between onion soup and French Onion soup?

Onion soup incorporates different types of onions and you may use any type of stock. French onion soup, on the other hand, only uses yellow onions and beef stock.

How to make this super easy yet delicious french onion soup?

Cut onions into long strips.

Then heat an oiled pan, and caramelize the onions until soft and golden brown. When the onions are caramelized, they are so sweet and juicy, then pour in the cognac. Let the alcohol evaporates, for about 10 sec.

Put butter in, and mix well until incorporated. (don’t add butter too early coz the butter is burnt very easily)

Add some ground pepper, mix well, then pour in the broth, and bring it to a boil.

Add some salt to taste.

Mince garlic and apply it to the toast.

I have learnt that wetting your knife before cutting onions will help prevent crying in the kitchen. Super simple but very effective! Give it a try. 🙂

Then bake in a 230C oven for about 10 minutes until the cheese is melted and golden brown.

Why do onions make you cry and how to prevent it?

When an onion is sliced or diced, the onion’s cells release these compounds into the air. When this occurs, an “enzyme” works to alter the amino acids into lachrymator compounds. This form of sulfuric acid irritates the nerves around the eyes making them tear. (source)

How to choose the right onion to cook?

Yellow Onions: the most common cooking onion with a competitive price. They are the go-to. Strong flavour with a bit of sweetness. Hold up well after cooked and they caramelized nicely. (they are the type for French onion soup!)

White Onions: Stronger flavour than yellow onions but they don’t hold up well. Perfect with stew/braised dish so they melt in the sauce.

Red Onions: Perfect for salad although you may cook with it. The colour will fade if you cook them. mild flavour.

Sweet Onions: As the name suggested, this is the sweet onion and perfect for eating raw if you are looking for an onion kick to your salad.
